Marilyn's Quiche Tartlets
- 1 recipe plain pastry
- 6 slices bacon
- 1 cup heavy cream
- softened butter
- 3/4 cup grated Swiss cheese
- 2 eggs
- 1/2 tsp. salt
- dash of cayenne pepper
- Line 24 two-inch tart pans with pastry rounds, but don't prick the bottoms. Do not bake.
- Fry bacon until crisp.
- Drain the bacon fat, pat extra grease off the bacon with a paper towel. Cool, then crumble.
- 40 minutes before serving, pre-heat the oven to 400 degrees F.
- Beat the eggs, cream, salt and pepper.
- Brush the bottoms of the unbaked pastry shells lightly with softened butter.
- Sprinkle bacon bits and cheese on the buttered pastry, then fill with the egg mixture to just below the top of the unbaked pastry shell.
- Bake at 400 degrees for 15 minutes, then reduce to 300 degrees F. and bake until the egg mixture has puffed up and is a little brown on top (about 15 minutes.)
