Quiche Tartlets

Marilyn's Quiche Tartlets

To bake ahead of time, follow the preparation instructions, bake according to directions, remove from the oven to cool, then wrap to freeze. Reheat frozen mini quiches for 5 minutes before serving.
  • 1 recipe plain pastry
  • 6 slices bacon
  • 1 cup heavy cream
  • softened butter
  • 3/4 cup grated Swiss cheese
  • 2 eggs
  • 1/2 tsp. salt
  • dash of cayenne pepper
  1. Line 24 two-inch tart pans with pastry rounds, but don't prick the bottoms. Do not bake.
  2. Fry  bacon until crisp.
  3. Drain the bacon fat, pat extra grease off the bacon with a paper towel. Cool, then crumble.
  4. 40 minutes before serving, pre-heat the oven to 400 degrees F.
  5. Beat the eggs, cream, salt and pepper.
  6. Brush the bottoms of the unbaked pastry shells lightly with softened butter.
  7. Sprinkle bacon bits and cheese on the buttered pastry, then fill with the egg mixture to just below the top of the unbaked pastry shell.
  8. Bake at 400 degrees for 15 minutes, then reduce to 300 degrees F. and bake until the egg mixture has puffed up and is a little brown on top (about 15 minutes.)
