Apple Cake

Marilyn's Apple-Bottom Cake

This is one of my mom's favourite cake recipes. Marilyn usually uses Mcintosh apples, but has also used Golden Delicious and Granny Smith in this recipe.

Apple bottom:
  • 5 apples
  • 1/4 cup sugar
  • 2 tsp cinnamon
  • 1 tbsp flour

Cake batter:

  • 2 eggs
  • 4 tbsp melted butter
  • 1/2 cup milk
  • 2 cups flour
  • 1 cup sugar
  • 2 Tbsp baking powder
  • 1/2 tsp. salt
  1. Grease a 9 X 13" pan.
  2. Wash and peel the apples and slice into the pan.
  3. Sprinkle with a mixture of 1/4 cup sugar, 2 tsp. cinnamon and 1 tbsp. flour.
  4. Dot with butter.
  5. In a large bowl, mix 2 eggs, 4 tbsp melted butter and 1/2 cup milk.
  6. Add 2 cups flour sifted with 1 cup sugar, 2 tbsp baking powder and 1/2 tsp. salt.
  7. Cover apples with this dough and bake in preheated 350 degrees F oven for 35 minutes.

  • 1-3/4 cups whole wheat flour
  • 1/2 cup softened salted butter (extra for glaze)
  • 1/4 cup + 1 Tbsp sugar
  • 4 apples, peeled
  • 1 large egg, beaten
  • 1/2 tsp milk
  • 1 Tbsp melted butter
  • 1 tsp cinnamon
  1. Line an 8" round cake pan with parchment paper, then grease and flour.
  2. Preheat oven to 425 degrees F.
  3. Sift flour into a bowl. With a pastry blender or two knives, cut in the 1/2 cup butter until pieces of butter are small pea-sized.
  4. Stir in 1/2 cup sugar.
  5. Peel two apples, discard peel,  then grate the apples into the bowl.
  6. Mix  1 large beaten egg with 1/2 tsp milk, stir into the flour ad apple mixture to make a dough.
  7. Turn the dough onto a piece of floured parchment paper and knead.
  8. Press dough evenly into the bottom of the prepared pan.
  9. Slice remaining apples into thick, moon-shaped wedges and arrange on the dough.
