Oatmeal Drop Cookies

  • 1 cup white granulated sugar
  • 1/2 cup softened butter
  • 1 Tbsp. all-purpose flour
  • 1 large egg
  • 1 tsp. real vanilla extract
  • 1 cup oatmeal flakes
Preheat oven to 350 degrees F.
Cream butter and sugar.
Add flour, beaten egg and vanilla. Mix well.
Stir in oatmeal.
Lightly grease cookie sheets.
Drop batter by spoonfuls about 2 inches apart.
Bake in preheated 350 degree oven 12-14 minutes.

Oatmeal Raisin Cookies

A simple, old-fashioned cookie.
Preheat oven to 400 degrees F.

Cream together:
  • 1/2 cup butter
  • 1 cup white granulated sugar

Add and mix well:

  • 2 beaten eggs
  • 1/4 cup milk
  • 2 cups oatmeal
  • 1 cup raisins

Stir or sift together, then add:

  • 1-1/2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp salt
  • 1 tsp. cinnamon

Drop by spoonfuls onto greased cookie sheets and bake 10-15 minutes in a preheated 400 degree F. oven.

Oatmeal Cookies

  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup butter or margarine
  • 1 large beaten egg
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup flour
  • 2-1/2 cups large-flake oatmeal OR 1-1/2 cup oatmeal and 1 cup coconut
  • 1/2 cup chocolate chips OR raisins (optional)
  1. Preheat oven to 350 degrees F.
  2. Grease 2 baking sheets or line with parchment paper.
  3. Cream butter and sugars, add egg.
  4. In another bowl, combine flour, salt and baking soda with a whisk.
  5. Add flour mixture to butter mixture by spoonfuls, mixing well.
  6. Fold in oatmeal and optional coconut and/or chocolate chips or raisins.
  7. With clean hands, roll cookie dough in balls. Or use a cookie scoop.
  8. Place balls on parchment paper or greased cookie sheet, leaving space for spread between each one.
  9. Press cookies down with a fork to flatten.
  10. Bake in preheated 350 degree F oven till crisp and golden, about 12 minutes.
