Meringues

Nan Findlay's Surprise Meringues

These were Lauren's favorite cookies when she was little. Norm's mother made these meringues every Christmas.
Nan submitted this recipe as her favorite for the Dorset Park Minor Hockey Ladies Auxiliary Community Cookbook fundraiser.
  • 4 egg whites
  • 1/4 tsp salt
  • 1/4 tsp. cream of tartar
  • 2 tsp. vanilla
  • 1-1/2 cups sugar
  • 1/2 cup chopped walnuts
  • 12 oz. pkg. semi-sweet chocolate chips
Beat egg whites, salt, cream of tartar and vanilla till soft peaks form.
Add the granulated sugar gradually, beating until peaks are stiff.
Fold in chocolate pieces and nuts.
Instead of nuts, you could add another 1/2 cup of chocolate chips.
Cover cookie sheet with parchment paper.
Drop by rounded teaspoons onto the paper.
Bake in a slow oven, preheated to 300 degrees F, about 25 minutes.

Angel Kisses

Very easy. Leave them in the oven overnight for an angel kiss in the morning.
Makes one sheet of chocolate chip meringues.
  • 2 egg whites
  • 2/3 cup white sugar
  • dash of salt
  • 1 tsp. vanilla, (or almond or peppermint flavoring)
  • 1 package (6 oz) chocolate bits or chips
  • 1 cup walnuts, chopped (optional)
Preheat oven to 350 degrees F.
Beat egg whites until stiff.
Gradually add sugar, salt, and a few drops of flavoring and continue to beat.
Fold in chocolate chips and nuts with a spatula.
Spoon mounds by teaspoonsful onto a cookie sheet.
(Or line a cold oven rack with aluminum foil and use as a cookie sheet.)
TURN OFF preheated oven.
Place cookies in the turned-off oven and leave at least 4 hours or overnight.
