- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 2 large eggs
- 1 cup sugar
- 8 tbsp melted butter or oil
- 2 cups homogenized milk (or use 1 cup skim milk and 1 cup cream)
- 1/2 cup buttermilk (or sour 1/2 cup milk with 2 tsp. lemon juice or vinegar and let sit 5 minutes))
- 1/2 tsp vanilla
Whisk together flour, salt and baking soda in one bowl.
In a mixer or vigorously by hand, combine sugar and oil, then add the milk, buttermilk and vanilla.

Beat to combine.
Gradually add the dry flour mixture, combine.
Cover and refrigerate.
When ready to preheat the waffle iron, remove the batter from the fridge.
As there is sugar in this batter, it may stick more, so spray on a light coating of vegetable oil spray or paint a coat of oil on the waffle iron with a basting brush before pouring in the batter.
Depending on the size of your waffle iron, pour on 1/2 cup of batter or less.
Cook until the waffles are golden (a sign that they are ready is that they stop "steaming.")
This will take about 3 minutes or more per waffle.
Six Waffle Version
- 1-1/2 cups all-purpose flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1 egg
- 1/2 cup plus 1 Tbsp granulated sugar
- 2 Tbsp butter, softened
- 2 Tbsp shortening
- 1/2 cup half-and-half
- 1/2 cup milk
- 1/4 cup buttermilk (or sour 1/4 cup milk with 1 tsp lemon juice or vinegar)
- 1/4 tsp vanilla
Combine flour, salt, baking soda in a medium bowl.
Lightly beat the egg in a separate bowl with an electric mixer.
Add sugar, butter and shortening and mix well until smooth.
Add the half and half, milk, buttermilk and vanilla, mix well.
Add the dry flour mixture to the wet mixture while beating.
Mx until smooth.
Cover and chill overnight or 12 hours.
(Batter can be used right away if necessary but will be better in the morning!)
Take batter from the fridge.
Rub a light coating of vegetable oil on a waffle iron.
Peheat the waffle iron.
Spoon 1/3 to 1/2 cup of batter into the waffle iron and cook 3-4 minutes until light brown.
