Oatmeal Cookies
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 cup butter or margarine
- 1 large beaten egg
- 1 tsp vanilla
- 1 tsp salt
- 1 tsp baking soda
- 1 cup flour
- 2-1/2 cups large-flake oatmeal OR 1-1/2 cup oatmeal and 1 cup coconut
- 1/2 cup chocolate chips OR raisins (optional)
- Preheat oven to 350 degrees F.
- Grease 2 baking sheets or line with parchment paper.
- Cream butter and sugars, add egg.
- In another bowl, combine flour, salt and baking soda with a whisk.
- Add flour mixture to butter mixture by spoonfuls, mixing well.
- Fold in oatmeal and optional coconut and/or chocolate chips or raisins.
- With clean hands, roll cookie dough in balls. Or use a cookie scoop.
- Place balls on parchment paper or greased cookie sheet, leaving space for spread between each one.
- Press cookies down with a fork to flatten.
- Bake in preheated 350 degree F oven till crisp and golden, about 12 minutes.
