One-Layer Quick White Cake

A simple one-layer 9 x 9 inch square white cake for a quick dessert topped with fruit, ice cream, whipped cream, or your favorite icing. 

Preheat oven to 350 degrees F.
Grease and flour a 9 x 9 inch pan, or use cupcake liners in a muffin pan.

Cream:
  • 1 cup white sugar
  • 1/2 cup softened butter
  • 2 beaten eggs
  • 2 tsp. real vanilla extract
  • 1/2 cup milk
In a separate bowl, sift:
  • 1-1/2 cups all purpose flour
  • 1- 3/4 tsp. baking powder
Add dry ingredients gradually to butter mixture till moistened.
Turn into greased and floured pan or into cupcake liners in a muffin pan.
Bake at 350 degrees 30-40 minutes (till top springs back to the touch or toothpick comes out clean).
 If making cupcakes, bake 20-25 minutes.
