Smoked Salmon Mousse

  • 1 lb. (500 g) smoked salmon
  • juice of 1 lemon
  • 1/4 cup melted, unsalted butter
  • 2 tbsp vodka or gin
  • 1 cup (250 ml) whipping cream
  • salt and white pepper to taste
  1. Discard salmon skin and bones. Cut salmon into chunks.
  2. In a blender or food processor, lightly mix salmon, lemon juice, butter and vodka or gin.
  3. Add whipping cream and mix till smooth.
  4. Season to taste.
Makes about 3-1/2 cups of smoked salmon spread.
Refrigerate until serving.
Serve with crackers or small squares of pumpernickel.
