One of the families in our old neighbourhood held a big birthday party for their son every summer, around their backyard pool. They'd invite neighbours, relatives, and business associates with children. The party menu was simple--fruit juice, barbecued hot dogs and hamburgers, popsicles or birthday cake for the kids, and rum cake for the adults at coffee time. Annika's rum cake was as no-fuss as her entertaining style, but it was very good and everyone wanted the recipe.
- 1 package yellow cake mix
- 1 package instant vanilla pudding mix
- 4 beaten eggs
- 1/2 cup dark rum
- 1/2 cup vegetable oil
- 1/2 cup cold water
- icing sugar (optional)
Combine ingredients in a mixer. Pour batter into a greased and floured bundt pan. In preheated 325 degree F oven, bake 1 hour. Let sit 10 minutes then remove from pan and cool cake on a cooling rack. Place on a plate and dust with icing sugar if desired, before cutting.
