Homemade Granola

Granola #1
Makes about 5 cups. Try sprinkling this on yogurt.
  • 3 cups old-fashioned rolled oats
  • 1 cup chopped walnuts
  • 1/4 cup firmly packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 6 tablespoons pure maple syrup
  • 3 tablespoons canola or safflower oil, at room temperature
  • 1/2 tablespoon pure vanilla extract
  1. Set an oven rack in the middle of the oven and preheat the oven to 225°F/107°C.
  2.  In a large bowl, toss together oats, walnuts, brown sugar, cinnamon, and salt.
  3. Pour on the maple syrup, oil, and vanilla and toss to coat the oat mixture thoroughly.
  4. Spread the mixture evenly on a parchment-paper covered baking sheet and bake for 10 minutes.
  5. Turn the pan around and bake 10 minutes more.
  6. Remove the pan to a wire rack to cool to room temperature.

Granola #2.
  • 6 cups rolled oats
  • 1 cup shredded coconut (optional)
  • 1 cup toasted wheat germ
  • 1/2 cup unsalted sunflower seeds
  • 1/4 cup sesame seeds
  • 1/4 cup chopped nuts
  • 1/2 cup melted butter or vegetable oil
  • 1/2 cup honey
  • 1/4 cup water
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 cup raisins

  1. Preheat oven to 350 degrees F.
  2. Combine oats, coconut, wheat germ, seeds, nuts in a large bowl.
  3. In a separate bowl, mix butter, honey, water, salt, cinnamon and vanilla.
  4. Pour butter mixture over dry ingredients in the large bowl and stir together.
  5. Spread on cookie sheets.
  6. Bake at 350 degrees F 25-30 minutes--don't forget to stir frequently. Bake oats till crisp and golden; take care not to burn the coconut if using.
