Oatmeal Shortbread

  • 1 cup butter
  • 1/2 cup brown sugar
  • 1 tsp. vanilla
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 2 cups fine ground oatmeal
Cream butter, sugar and vanilla.
In a separate bowl, mix together flour, baking soda and oatmeal.
If you only have larger flake oatmeal, grind in a blender or food processor before adding to flour mixture.
Add dry ingredients to the butter mixture, mix in.
Form cookie batter into a roll, wrap with wax paper, chill.
When dough is cold, slice into rounds.
Place on greased cookie sheets.
Bake at 350 degrees till cookies are slightly golden.
