Oatmeal Shortbread
- 1 cup butter
- 1/2 cup brown sugar
- 1 tsp. vanilla
- 1 cup flour
- 1/2 tsp. baking soda
- 2 cups fine ground oatmeal
- Cream butter, sugar and vanilla.
- In a separate bowl, mix together flour, baking soda and oatmeal.
- If you only have larger flake oatmeal, grind in a blender or food processor before adding to flour mixture.
- Add dry ingredients to the butter mixture, mix in.
- Form cookie batter into a roll, wrap with wax paper, chill.
- When dough is cold, slice into rounds.
- Place on greased cookie sheets.
- Bake at 350 degrees till cookies are slightly golden.
