Khandallah Carrot Coconut Cookies

Cousins who emigrated from Scotland to Australia share this recipe from a fundraising cookbook produced in the '90s by the parents of Cashmere Avenue  School in Khandallah, New Zealand.

1 cup mashed, cooked unsalted carrots (If using leftover salted carrots,do not add the 1/2 tsp salt below)
3/4 cup sugar
250 g soft butter (or 1 cup plus 2 tbsp. soft butter)
2 beaten eggs
2 cups all-purpose flour
2 tsp. baking powder
3/4 cup coconut
1/2 tsp. salt

Mix mashed cooked carrot, sugar, butter and beaten eggs together well.
Sift together flour, baking powder and salt.
Stir flour mixture gradually into carrot mixture.
Stir in coconut.
Drop by heaping teaspoonsful onto ungreased baking sheet.
Bake in preheated 350 degree F oven for 8-10 minutes.
