Whole Wheat Banana Nut Waffles

Like the last recipe, this one came printed on the back of the cleaning instructions for my old Belgian Waffle maker. 

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 cup milk
  • 1 ripe, mashed banana
  • 1 egg, separated
  • 1 Tbsp. melted butter OR vegetable oil
  • 1/4 cup chopped walnuts or pecans

Sift dry ingredients together in a bowl.
Separate the egg and add the egg yolk and milk to the dry ingredients. Beat thoroughly.
Mash banana and beat into the batter with nuts.
Beat egg white till stiff. Stir 1/4 into the batter and then gently fold in the remaining egg white with a spatula.
Pour a scant 1/3 cup of batter onto a preheated 2-waffle Belgin waffle maker mold.

Bake waffles. Repeat to make six.  Put uneaten waffles on a cooling rack to cool, package individually in small ziplock bags, freeze, remove from freezer to heat up in the toaster when needed.
