Yahoo News today has an interesting feature about the benefits of adding 2 tsp. of safflower oil daily to your diet. Tested on post-menopausal women with type 2 diabetes, eating this oil had great health benefits, improving heart health and regulating blood sugar levels-- and no drawbacks like weight gain.
Safflower oil is pressed from the seeds of a flower from the thistle family. It's distinct in composition from sunflower oil, so don't substitute.
While the seeds themselves are bitter, the oil is flavourless. Try cooking with it, use it in salad dressings, or add a couple teaspoons of safflower oil to drinks like fruit smoothies.
