Herbed "Baguette" Chicken, Garlic Mashed Potatoes and Rosemary Carrots for Dinner


















A package of  chicken drumsticks, two large potatoes, half a stale baguette, five carrots,some butter and about a cup of  milk.

Oven-baked Crispy Chicken Drumsticks (10 min. prep time)
Preheat oven to 350 degrees F.

Grate the heel of a stale baguette (you can use other bread) in the blender.
Add about 5 shakes each of onion salt, granulated garlic, dried oregano.
Place this bread crumb mixture in a shallow bowl.
Spray baking pan with olive oil.
Half-fill a shallow dish with cold water.
Dip chicken drumsticks into cold water, then into crumb mixture to coat.
Place on oiled baking pan in a 350 degree F. oven till cooked through, golden and crispy, about 1 hour (50 minutes on "convection roast" setting).


Two-Potato Garlic Mashed Potatoes
Garlic Mashed Potatoes
Peel and cut up 2 large potatoes.
Place in a pot.
Cover with cold water.
Add 2 tsp. salt.
Put lid on pot, heat to boiling.
Partially remove lid.
Continue boiling till tender.
Drain water.
Place potatoes in a serving dish.
Put 2 blobs of butter (about 2 tbsp) in the hot pot.
Brown 2 peeled, diced cloves of garlic in butter.
Turn heat to low.
Put potatoes back in the pot with 1/4 cup milk and mash.
Turn off heat. Keep potatoes in the pot with  lid on till ready to serve.

Rosemary Carrot Coins
Peel 4-5 large fresh carrots and cut into coins.

Place carrot coins in a pot.
Cover with cold water.
Add 1 tsp. salt.
Put lid on pot.
Bring to a boil, then turn heat to low to finish cooking.
Carrots will be done, hot and tender, by the time the chicken is ready.
Drain water from the pot, place carrots in a bowl.


Add a pat of butter and strip  a 4 inch sprig of fresh rosemary over the carrots.
Lightly Breaded Chicken Ready for the Oven
