Combine batter in a mixer:
- 1-1/3 cup all-purpose flour
- 1-3/4 tsp. baking powder
- 2 tsp. salt
- 1 cup water
- 1 egg
- 2 tsp. granulated sugar
Dip fish into batter, coating generously, and quickly drop into hot oil.
Fry until dark golden brown about 5 minutes
Remove from oil, drain on paper towels or metal rack.
