Long John Silver Restaurant Batter Fried Codfish

Cut 2 lbs. fresh or thawed cod fillets into seven 2-inch wedges
Combine batter in a mixer:
  • 1-1/3 cup all-purpose flour
  • 1-3/4 tsp. baking powder
  • 2 tsp. salt
  • 1 cup water
  • 1 egg
  • 2 tsp. granulated sugar
Heat 3 cups soybean oil (or substitute canola oil)  in a deep pan for frying
Dip fish into batter, coating generously, and quickly drop into hot oil.
Fry until dark golden brown about 5 minutes
Remove from oil, drain on paper towels or metal rack.
