3/4 cup all-purpose flour
3/4 cup cornmeal
1/3 cup granulated sugar
3/4 tsp salt
3/4 cup milk
1/4 cup butter, melted
1 egg
Preheat oven to 400 degrees F.
In large bowl, whisk together flour, cornmeal, sugar, salt.
Whisk together milk, butter, egg.
Pour egg mixture over dry ingredients.
Stir till well combined.
Scrape into greased 9-inch square baking pan.
Bake in 400 degree F oven till toothpick inserted in centre comes out clean, 13-15 min.
Turn out onto cooling rack and cool completely.
To fry, halve corn bread; cut each half crosswives into 8 pieces.
In large skillet, heat half of the oil over medium-high heat.
Toast corn bread pieces, in batches and turning once, till golden, 2-3 min, add remaining oil as needed.
