Cherry Tomato Bruschetta

Mix:
  • 1 Tbsp olive oil
  • 1-1/2 tsp balsamic vinegar
  • 1/3 cup small basil leaves (or chop large leaves)
  • 1/4 tsp salt
  • 3 cups halved cherry tomatoes
  • 8 slices crusty Italian bread, grilled or toasted
  • 2 cloves garlic, halved

Rub one side of toasted bread with cut side of garlic.
Top with tomato mixture.

Cherry Tomato Mixture Recipe # 2

  • 2 cups halved cherry tomatoes
  • 3 Tbsp finely chopped Italian parsley
  • 2 Tbsp olive oil
  • 2 tsp white or red wine vinegar
  • 1 clove garlic, chopped
  • hot chili flakes
  • 12 bruschetta toasts
  • salt
Place halved tomatoes in medium boil with parsley, oil, vinegar, garlic and chili flakes. 
Toss mixture.
Chill up to 1 day before serving.
Just before serving, sprinkle with salt to taste and toss again.
Top toasts with tomato mixture.

Bruschetta Toasts

  • thick slices Italian crusty bread
  • fresh garlic cloves
  • extra-virgin olive oil
Place bread slices on ungreased grill pan or broiler pan.
Brush both sides of bread with oil
Toast each side till golden brown.
Remove toasts, rub with cut side of garlic clove.
Sprinkle lightly with salt and pepper.
Cut larger slices in half before adding toppings if smaller slices are desired.
