Marilyn's Pizza Dough

My mom's pizza recipe is ready in about 90 minutes.
Making the dough takes about 40 minutes, the pizza cooks in about 20.
The dough makes a more bread-like pizza crust than cold rise dough recipe.

Traditional Dry Yeast Method

  • Put 1 cup warm water in a large bowl.
  • Dissolve 1 tsp sugar in the water.
  • Sprinkle 1 Tbsp traditional dry yeast over the water.
  • Let sit 10 minutes.

Stir in: 
  • 2 Tbsp oil
  • 1-1/2 cups flour
  • 1 tsp salt
  • About 1 cup more flour, enough to make a sticky dough.
  1. Cover dough and let rest 10 minutes.
  2. Roll out dough on lightly floured surface.
  3. Let rolled dough stand 15 minutes.
  4. Add toppings.
  5. Preheat oven to 450 degrees F.
  6. Bake in lower half of oven 16-20 minutes.

Quick-Rise dry yeast method:
  1. Whisk together: 1-1/2 cups flour, 1 tsp salt in a large, warm stand-mixer bowl.
  2. Stir in 1 Tbsp instant dry yeast.
  3. Place bowl on stand mixer with kneading hook attachment, start machine blending flour mixture on low.
  4. In microwave, heat 1-1/2 cups water to 120 degrees F.
  5. Stir 2 Tbsp olive oil into the water.
  6. With mixer on low, while running, pour warm liquid into flour mixture.
  7. Let knead until dough forms a ball, 1-3 minutes.
  8. Remove from dough hook, cover dough, and let rest 10 minutes.
  9. Roll out dough on parchment paper, let stand 15 minutes while you prepare pizza toppings and preheat oven to 450 degrees F.
  10. Put toppings on pizza, bake on pizza stone or on pizza pan for 16-20 minutes until done.
