My mom's pizza recipe is ready in about 90 minutes.
Making the dough takes about 40 minutes, the pizza cooks in about 20.
The dough makes a more bread-like pizza crust than cold rise dough recipe.
Traditional Dry Yeast Method
- Put 1 cup warm water in a large bowl.
- Dissolve 1 tsp sugar in the water.
- Sprinkle 1 Tbsp traditional dry yeast over the water.
- Let sit 10 minutes.
Stir in:
- 2 Tbsp oil
- 1-1/2 cups flour
- 1 tsp salt
- About 1 cup more flour, enough to make a sticky dough.
- Cover dough and let rest 10 minutes.
- Roll out dough on lightly floured surface.
- Let rolled dough stand 15 minutes.
- Add toppings.
- Preheat oven to 450 degrees F.
- Bake in lower half of oven 16-20 minutes.
Quick-Rise dry yeast method:
- Whisk together: 1-1/2 cups flour, 1 tsp salt in a large, warm stand-mixer bowl.
- Stir in 1 Tbsp instant dry yeast.
- Place bowl on stand mixer with kneading hook attachment, start machine blending flour mixture on low.
- In microwave, heat 1-1/2 cups water to 120 degrees F.
- Stir 2 Tbsp olive oil into the water.
- With mixer on low, while running, pour warm liquid into flour mixture.
- Let knead until dough forms a ball, 1-3 minutes.
- Remove from dough hook, cover dough, and let rest 10 minutes.
- Roll out dough on parchment paper, let stand 15 minutes while you prepare pizza toppings and preheat oven to 450 degrees F.
- Put toppings on pizza, bake on pizza stone or on pizza pan for 16-20 minutes until done.
