Tahini Dressing for BBQ Vegetables

Rub vegetables with 2 TB olive oil, salt and pepper.
BBQ in foil or directly on the grill.
Drizzle with dressing.
Whisk together:
  • 1 cup tahini
  • juice squeezed from 1 medium-sized lemon
  • 4 Tbsp sunflower or canola oil
  • 1 Tbsp maple syrup
  • salt & pepper
