Baked Fruit Skillet Pancakes

Puffy Peach Skillet Pancake

Apples may be substituted for peaches.
  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 peaches, sliced
  • 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • dash salt
  • 4 large eggs, separated
  • 1/3 cup milk
  • 1/2 cup sugar
Preheat oven to 400 degrees F.
Separate eggs.

Melt butter in large ovenproof skillet.
Combine 1/4 cup sugar with cinnamon and nutmeg and sprinkle over butter in pan.
Arrange peach slices over sugar/spice mixture.
Cook slowly for 2 minutes.
Take skillet off heat.

Combine flour, baking powder, salt with egg yolks and milk.
Beat egg whites until foamy, gradually adding 1/2 cup sugar, beating until soft peaks form.
Fold beaten egg whites into batter.
Pour batter over peaches, spreading evenly to edge of skillet.

Bake at 400 degrees F for 15 to 20 minutes or until golden and puffy.
Remove from oven, loosen edges with spatula.
Invert a flat, round plate over skillet. Invert both and lift off skillet.
Ct into wedges and serve with sour cream or ice cream, bacon, sausage or slices of ham for brunch or lunch.


Elizabeth Berg's Baked Fruit Pancake

Elizabeth Berg is a novelist from Boston. I copied this recipe from a book she wrote about writing, Escape Into the Open, the Art of Writing True. She got it from a call-in recipe show called The Yankee Kitchen.

Note: 1 medium apple makes about 1 cup, sliced, so you'll need 2 medium apples. 1 medium peach or pear makes 1/2 cup sliced, so 4 medium peaches or pears. 

  • 1 cup milk
  • 3 Tbsp sugar
  • 2 eggs
  • 1/2 tsp salt
  • 2/3 cups flour
  • 1/2 tsp lemon zest
  • 2 Tbsp melted butter
Preheat oven to 400 degrees F.
Place all ingredients except the butter in a blender.
Process on high.
Melt butter in 9-inch pie plate.
Pour in batter.
Bake in preheated 400 degree oven 30-35 minutes until it puffs and turns a deep golden colour.
Meanwhile, prepare topping:
  • 2 Tbsp butter
  • 2 cups apples, peeled and thickly sliced (or peaches, plums, nectarines, strawberries...)
  • 3 Tbsp sugar
  • 1/2 tsp cinnamon
Melt butter in skillet.
Add remaining ingredients.
Cook on medium-low heat till tender.
Put onto centre of baked pancake and serve immediately.
