Marilyn's Easy Marshmallow Chocolate Fudge (Evaporated Milk)
Clipped from an ad for Carnation Evaporated Milk, this easy recipe for 5-minute fudge requires no beating, no soft-ball test, no candy thermometer. You should get perfect results as long as you keep stirring the pot, so have all the ingredients measured and ready before you start.
My mom made this fudge for Becca on her birthday. It's also a good Christmas stocking stuffer, packed in a treat bag.
- Butter for greasing the pan
- 2/3 cup (small can) undiluted evaporated milk
- 1-2/3 cup granulated white sugar
- 1/2 tsp salt
- 1-1/2 cups miniature marshmallows (OR about 16 medium marshmallows diced)
- 1-1/2 cups semi-sweet chocolate chips
- 1 tsp vanilla
- 1/2 cup chopped nuts (optional)
Butter an 8-inch square pan.
Mix 2/3 cup evaporated milk, 1-2/3 cups sugar and 1/2 tsp salt in saucepan.
Stir over medium heat till boiling, then cook 5 minutes still stirring constantly.
Remove from heat.
Immediately add marshmallows, chocolate chips, vanilla, chopped nuts if using.
Stir until melted in, about 2 minutes.
Pour right away into a buttered 8-inch square pan, smooth with spatula.
When cool, cut in squares.
Makes about 2 pounds of fudge.
Note: You can also spoon fudge into individual paper candy cups while still warm, but it's time-consuming.
Easy Plain or Nut Chocolate Fudge (Condensed Milk)
Good plain . Add nuts to the mix, or press halved pecans into the top of the fudge before it sets.
- 2 cups (340 grams or 12 oz) semisweet chocolate chips
- 1 can condensed milk (396 g or 14 oz)
- 1/4 tsp salt
- 1 Tbsp butter (plus more for pan)
- optional: 1/2- 1 cup nuts (chopped walnuts, unsalted peanut pieces, or walnuts)
- 3/4 tsp real vanilla extract
Line an 8" square pan with foil and grease the foil with softened butter.
In a saucepan over low heat, combine, stirring continuously:
1-3/4 cups condensed milk, 2 cups chocolate chips, 1/4 tsp salt, 1 Tbsp butter.
Continue to stir over low heat until all chocolate chips are melted.
Stir in nuts if using.
Remove from heat, then stir in 3/4 tsp vanilla.
Right away, pour into the foil-lined pan. Smooth with spatula.
Fudge will set and firm up while cooling. Allow to cool completely in the pan.
If needed quickly, cool in fridge.
Once completely cool, slice fudge in pieces.
