Pumpkin Muffins

Plain Pumpkin Muffins

 Makes 3 dozen.

  • 4 large eggs
  • 2 cups white granulated sugar
  • 1-1/2 cups vegetable oil
  • 1-3/4 cups pumpkin puree (a 14 oz. can)
  • 3 cups all-purpose sifted flour
  • 1 Tbsp cinnamon
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 cups sultana raisins
Preheat oven to 400 degrees F.
In a large bowl, beat eggs well.
Add sugar, oil and pumpkin. Mix well.
Add remaining ingredients. Combine.
Bake 15 minutes at 400 degrees F.

Pumpkin Muffins with Crumble Topping

These are also good plain, without the topping, but the topping adds that extra sweet crunch.

Makes 2 dozen muffins.

Batter
  • 2-1/2 cups all-purpose flour
  • 1/2 cup oatmeal (rolled oats)
  • 4 tsp. pumpkin pie spice* 
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 cups pumpkin puree OR 1-1/2 cups pumpkin puree + 1/2 cup applesauce OR 1-1/2 cups pumpkin puree + 1/2 cup mashed banana
  • 1 cup packed brown sugar
  • 1 cup granulated white sugar
  • 2/3 cup vegetable oil
  • 3 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1 cup raisins and/or chopped walnuts (optional)
Crumble Topping
  • 1/2 cup packed brown sugar
  • 4 Tbsp cold butter
  • 1/3 cup rolled oats OR combination of oats and chopped nuts or coconut flakes
  • 4 Tbsp all-purpose flour
Directions
  1. Preheat oven to 350 degrees F.
  2. Prepare muffin pans for 24 muffins: grease pans or line with paper liners.
  3. Mix dry ingredients thoroughly: 2-1/2 cups flour, 1/2 cup oatmeal, 4 tsp. pumpkin pie spice, 2 tsp baking soda, 1 tsp baking powder, 1 tsp salt.
  4. In a separate bowl, whisk or mix together: pumpkin puree or mixture, 1 cup brown sugar, 1 cup white sugar, 2/3 cup vegetable oil, 3 lightly beaten large eggs, 1 tsp vanilla.
  5. Fold dry ingredients into pumpkin mixture and stir just until combined.
  6. Stir in raisins and/or nuts (optional).
  7. In a separate bowl make crumble topping: mix together sugar, oats and flour. Cut in butter until crumbly. You can use your fingers to make the mixture crumbly.
  8. Use an ice cream scoop if you have one, to spoon batter evenly into prepared muffin cups, filling each 2/3 full.
  9. Sprinkle each muffin with crumble topping.
  10. Bake in preheated 350 degree F oven 25-30 minutes or until centre of muffin springs back when touched lightly with a finger, and a toothpick inserted in the centre of a muffin comes out clean.

*Pumpkin Pie Spice Mix

If you don't have any pumpkin pie spice, you can mix your own.

  • 3 Tbsp ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp ground nutmeg
  • 1 tsp ground cloves
