Narnian Turkish Delight

Remember the enchanted, irresistible Turkish Delight candy in C.S. Lewis'  children's book The Lion, The Witch and the Wardrobe? Make it yourself, one flavour or many, by adding essences and corresponding food colouring. With orange essence, mix in orange food colouring. Use strawberry essence with red colouring, almond essence with yellow, with coconut flavouring add no colour at all. 

  • 4 oz. gelatin powder
  • 2 lb. sugar
  • 1 cup water
  • 6 limes, juiced
  • flavour essences and food colouring
  • icing sugar
  1. Heat a pan of water.
  2. Put a bowl over the pan and fill the bowl with 1/2 cup water.
  3. Soak gelatine in the water in the bowl over the pan of hot water, so that the gelatin remains liquid.
  4. In a second pan, dissolve sugar with the remaining 1/2 cup water on slow heat.
  5. After it dissolves completely, cook for an additional 3 minutes.
  6. Add sugar water to the dissolve gelatin.
  7. Add the juice of 6 limes, cook another 3 minutes.
  8. Raise a spoonful of the mixture, when done, it should fall thickly from the spoon.
  9. Grease pans with butter (one for each flavour/colour).
  10. Divide the candy batter if using more than one flavour/colour.
  11. Stir in flavour essence and colour.
  12.  Put in buttered pans to set.
  13. When set, cut into squares or shapes and roll in icing sugar.
