- 1/2 pound regular grind coffee
- 1 large beaten egg
- crushed eggshell from the large beaten egg
- 1 gallon water
- Mix the coffee, egg and eggshell together.
- Tie up the mixture in cheesecloth or place in a lightweight muslin bag.
- Fill a large kettle witih 1 gallon of freshly drawn cold water.
- Cover the kettle tightly.
- Set over low heat and bring very slowly to boiling.
- Boil 3 to 5 minutes.
- Taste the brew--remove the bag when the coffee is the desired strength.
- After removing the bag, cover the kettle again and let stand 10-15 minutes over low heat without boiling.
Cafe au Lait
For each cup of freshly brewed coffee, scald an equal measure of whole milk.
Simultaneously pour hot coffee and hot milk into each cup.
Sweeten as desired.
Boston Coffee
Serve coffee and cream in equal proportions.
Irish Coffee for 4
- 3 cups (24 oz) hot coffee
- 4 tsp white granulated sugar
- 6 oz. Irish whiskey
- 3 oz. Kahlua liqueur
- whipped cream (1 cup whipped)
- Cocoa powder
Fill 4 mugs 3/4 full of coffee.
Stir in 1 tsp sugar for each mug.
Pour Irish whiskey and Kahlua into the coffee.
Top with whipped cream and sprinkle with cocoa.
