My mom Marilyn gave me this recipe for custard. She said the recipe is from a White House chef who cooked for an American President.
Use as a pudding or a cake filling.
- 1/3 cup cold milk
- 1 Tbsp flour
- 5 tsp corn starch
- 1/4 cup white granulated sugar
- 2 egg yolks
- 1/3 cup hot milk
- 1/4 tsp. vanilla
- 1/4 cup heavy whipping cream
Separate 2 large eggs, set aside yolks.
- In mixing bowl, combine 1/3 cup cold milk, 1 Tbsp flour, 5 tsp cornstarch.
- Beat in until smooth: 1/4 cup sugar, 2 egg yolks.
- Stirring constantly with wire whisk, add 1/3 cup hot milk.
- Transfer mixture to a heavy pot.
- Bring to boil over medium heat, stirring constantly.
- Boil 1 minute. Take off heat.
- Stir in 1/4 tsp vanilla.
- Transfer custard mixture to a clean bowl.
- Refrigerate 1 hour or until custard is very cold.
- Whip 1/4 cup heavy cream.
- Fold the whipped cream into the very cold custard.
