Mom's Meatloaf
Mix in a stainless steel bowl:
- 1 pkg (about 1 lb) ground beef
- 1 large egg
- 1 slice bread moistened with milk or water
- 1 peeled and chopped yellow onion or use dried onion flakes or onion powder as a substitute
- sprinkle of garlic powder (optional) or 1 tsp minced garlic
Place in a parchment-paper lined loaf pan, bake at 350 degrees F 50 minutes to 1 hour until cooked through.
Ann Landers' Meatloaf
When I was growing up my sisters and I used to like to read Ann Landers syndicated advice column in the newspaper. She gave a lot of good advice. One of her most popular columns was her recipe for meatloaf. Now we know it's not a good advice to cook with msg.
- 2 lbs ground beef and pork
- 2 large eggs, slightly beaten
- 1-1/2 cups breadcrumbs
- 3/4 cup ketchup
- 1 tsp Accent seasoning (msg)
- 1/2 cup warm water
- 1 package onion soup mix
- 1 cup tomato sauce
- Preheat oven to 350 degrees F.
- In a large bowl mix ground meat, eggs, breadcrumbs, ketchup, seasoning, onion soup mix and liquid.
- Pat mixture into an ungreased loaf pan (line with parchment paper for easier clean-up).
- Pour tomato sauce over meat mixture.
- Bake in oven 1 hour.
Granny's Meatloaf
- 2 lbs ground beef or pork or a combination
- 1 extra-large egg
- 1 or 2 slices white bread, soaked in milk
- 1 medium onion, peeled and chopped
- 2 tsp salt
- 1 tsp ground black pepper
Combine ingredients in a mixing bowl.
Pat mixture into a loaf pan.
Bake in a preheated 350 degree F oven1 hour or until done.
Serve with mashed potatoes and corn.
Slice leftovers for sandwiches (on white bread with ketchup).
Glazed Meatloaf
Instead of tomato sauce or the egg/milk mixture added to Boboti, brush currant jelly on top of meatloaf before baking.
Boboti
A curried meatloaf dish from Capetown, South Africa.
- 1 large onion, diced
- 2 cloves garlic, chopped
- 2 chopped tomatoes
- 1 Tbsp vinegar
- 2 tsp curry powder
- 1 tsp salt
- 4 bay leaves
- 1 cup bread crumbs
- 1 egg
- 1/2 cup milk
- 2 lbs ground beef
- Saute diced onion until golden.
- Add garlic, then tomato, curry, bay leaves and salt.
- Add vinegar.
- Add meat, stirring constantly.
- Add bread crumbs.
- Simmer 5 minutes.
- Remove bay leaves.
- Pour mixture into a buttered ovenware dish.
- Whip egg and mix with milk.
- Pour egg mixture over meat.
- Bake in the oven at 350 degrees F. until the egg mixture bakes through.
Serve leftover Boboti on brown bread with mayonnaise or ketchup.
Boboti-Variation-in-a-Hurry
Short of time, I left out the chopping and used some different spices. The meatloaf turned out great.
- 2 lbs lean ground beef-and-pork
- 2 tsp salt
- 2 tsp each: curry powder, mild smoked paprika, ground mustard, onion powder
- 2 small slices fresh bread, grated into fresh crumbs in the blender. I used rye bread, that's what I had.
- 1 large egg
Mix all ingredients in a bowl.
Press into an ungreased Pyrex loaf pan.
Beat together:
- 1 large egg
- 1/2 cup whole milk
Pour egg mixture over ground meat mixture in pan.
Bake 1 hour in preheated oven: 325 degrees F. convection, or 350 degrees F regular oven.
