Espresso Sugar Cubes

A gift for those who like sweetened coffee. Can also be added to hot chocolate, or placed at the bottom of a rum cocktail.
Purchase two 90 compartment mini ice cube silicone trays.
To give as gifts, purchase 4-3/4" x 6 3/4" high cellophane bags, twist ties, and 5"x 7" jute bags that can be stencilled with Sharpie markers.
  • 1 Tbsp espresso powder
  • 1-1/2 tsp meringue powder
  • 1-1/2 Tbsp hot water
  • 1-1/2 cups sugar
Preheat oven to 250 degrees F.
In a large bowl, combine espresso powder, meringue powder, hot water.
Whisk until no lumps remain.
Let cool.
Add sugar and whisk until mixture resembles damp sand.
Spoon half of the sugar mixture into a 90 compartment silicone mini-ice-cube tray.
Using a rubber spatula, spread the mixture, pressing it tightly into the tray's compartments.
Scrape away any excess sugar mixture and return to bowl.
Repeat with remaining sugar mixture and a second try.
Place trays on a baking sheet and bake 40 minutes.

Allow cubes to rest until hardened, about 8 hours, before carefully releasing from trays.

To give as gifts, place sugar cubes in cellophane bags, secure with twist tie, and place inside jute bags that have been stenciled with a "Espresso Flavoured Sugar Cubes" label and design of your own.
