Sour Cream Cucumber Salad
My mom Marilyn's favorite:
Peel and thickly slice cucumber, then slice each round in half.
Toss with salted sour cream.
Garnish with chopped green onion if desired.
Quick Pickled Cucumber
- 1/2 English cucumber, very thinly sliced
- 1 small red onion, thinly sliced
- 2 Tbsp rice vinegar
- 2 tsp maple syrup
- sesame seeds or chopped peanuts (optional)
Combine vinegar and maple syrup, toss with cucumber and onion in a bowl.
Let marinate 10 minutes.
Drain and serve.

Cucumber Mango Salad
Thinly slice:
- 2 English (Persian) cucumbers
- 1 ripe but firm mango
- 2 green onions
- 1 jalapeno pepper
Whisk dressing in a bowl:
- 2 Tbsp lime juice
- 2 Tbsp olive oil
- 1 Tbsp grated ginger
- 1/2 tsp honey
- 1/4 tsp kosher salt
- 1/4 tsp pepper
Toss sliced vegetables and mango in dressing, then fold in:
- 1/4 cup cilantro
