Cucumber Salads

Cucumber salads get soft in the fridge quickly so make and eat right away, and make just enough.

Sour Cream Cucumber Salad

My mom Marilyn's favorite:
Peel and thickly slice cucumber, then slice each round in half.
Toss with salted sour cream.
Garnish with chopped green onion if desired.

Quick Pickled Cucumber

  • 1/2 English cucumber, very thinly sliced
  • 1 small red onion, thinly sliced
  • 2 Tbsp rice vinegar
  • 2 tsp maple syrup
  • sesame seeds or chopped peanuts (optional)
Combine vinegar and maple syrup, toss with cucumber and onion in a bowl.
Let marinate 10 minutes.
Drain and serve.

Can be used as a garnish for spicy noodles, sprinkled with sesame seeds or chopped peanuts.

Cucumber Mango Salad

Thinly slice:
  • 2 English (Persian) cucumbers
  • 1 ripe but firm mango
  • 2 green onions
  • 1 jalapeno pepper
Whisk dressing in a bowl:
  • 2 Tbsp lime juice
  • 2 Tbsp olive oil
  • 1 Tbsp grated ginger
  • 1/2 tsp honey
  • 1/4 tsp kosher salt
  • 1/4 tsp pepper
Toss sliced vegetables and mango in dressing, then fold in:
  • 1/4 cup cilantro
