Kale
Kale and Red Pepper Saute
A cooked kale side dish to plate with strips of grilled meat.
- 1 Tbsp olive oil
- 1 red pepper, cut in matchsticks
- 1/4 red onion, thinly sliced
- 1/2 bunch kale, ribs removed, coarsely chopped
- 1 Tbsp water
- 1/4 tsp salt
- 1/4 tsp hot red chili flakes
- 1 Tbsp red wine vinegar
- 1/4 tsp honey
- 2 Tbsp parmesan cheese, shaved
- Mix the vinegar and honey, set aside.
- Heat the frying pan over medium heat.
- Add oil, then onion and red pepper, cook about 3 minutes until onion is soft.
- Add kale and water.
- Cook 2-3 more minutes, until kale starts to wilt.
- Sprinkle with salt and chili flakes.
- Stir in vinegar and honey mixture.
- Transfer to plates and top with shaved parmesan.
