Kale

 Kale and Red Pepper Saute

A cooked kale side dish to plate with strips of grilled meat.

  • 1 Tbsp olive oil
  • 1 red pepper, cut in matchsticks
  • 1/4 red onion, thinly sliced
  • 1/2 bunch kale, ribs removed, coarsely chopped
  • 1 Tbsp water
  • 1/4 tsp salt
  • 1/4 tsp hot red chili flakes
  • 1 Tbsp red wine vinegar
  • 1/4 tsp honey
  • 2 Tbsp parmesan cheese, shaved
  1. Mix the vinegar and honey, set aside.
  2. Heat the frying pan over medium heat.
  3. Add oil, then onion and red pepper, cook about 3 minutes until onion is soft.
  4. Add kale and water.
  5. Cook 2-3 more minutes, until kale starts to wilt.
  6. Sprinkle with salt and chili flakes.
  7. Stir in vinegar and honey mixture.
  8. Transfer to plates and top with shaved parmesan.
