Higher in protein than regular pancakes or crepes.
- 1 cup cottage cheese
- 1/2 tsp salt
- 6 Tbsp milk
- 3 large eggs, separated
- 3/4 cup all-purpose flour
- butter for frying
- sour cream for serving (or cinnamon sugar)
- Beat cottage cheese, milk and salt until the consistency of heavy cream.
- Add 3 egg yolks 1 yolk at a time, continuing to beat.
- Gradually add the flour.
- In a separate bowl, beat 3 egg whites until stiff.
- Fold the egg whites into the cheese batter.
- Fry in butter, dropping by spoonfuls onto the melted butter in a frying pan.
- Serve cooked pancakes with sour cream, or with cinnamon sugar.
