Cottage Cheese Pancakes

 Higher in protein than regular pancakes or crepes.

  • 1 cup cottage cheese
  • 1/2 tsp salt
  • 6 Tbsp milk
  • 3 large eggs, separated
  • 3/4 cup all-purpose flour
  • butter for frying
  • sour cream for serving (or cinnamon sugar)
  1. Beat cottage cheese, milk and salt until the consistency of heavy cream.
  2. Add 3 egg yolks 1 yolk at a time, continuing to beat.
  3. Gradually add the flour.
  4. In a separate bowl, beat 3 egg whites until stiff.
  5. Fold the egg whites into the cheese batter.
  6. Fry in butter, dropping by spoonfuls onto the melted butter in a frying pan.
  7. Serve cooked pancakes with sour cream, or with cinnamon sugar.
