Bake in three seasoned 6-1/2 inch cast iron pans.

Preheat oven to 375 degrees F.
In a large bowl, stir together:
- 1-1/4 cups medium grind yellow cornmeal
- 1-1/4 cups all purpose flour
- 1/3 cup sugar
- 1 Tbsp baking powder
- 2 tsp salt
In another bowl mix:
- 3 large eggs, beaten
- 1-3/4 cups buttermilk
Add wet mixture to dry, stir.
Fold in:
- 15 oz. creamed corn
- 1/2 cup fresh diced jalapeno peppers
- 1/2 cup shredded Cheddar cheese
Coat seasoned cast-iron skillets with butter, then put in preheated 375 degree oven for 3 to 5 minutes to heat.
Remove pans from oven and ladle batter into pans.
Bake 30 minutes or until toothpick comes out clean.
