Lemon Loaf

  •  1/2 cup butter or shortening
  • 1 cup white granulated sugar
  • 2 large eggs, lightly beaten
  • 1-1/2 cups sifted all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup milk
  • grated rind of 1 lemon
Glaze:
  • juice of half a lemon
  • 1/4 cup icing sugar
  1. Grease and flour two 8-1/2 x 4-1/2 x 2-1/2" loaf pans.
  2. Preheat oven to 350 degrees F.
  3. Cream butter and sugar in a mixer 5 minutes.
  4. Add eggs, beating until mixed in.
  5. In a separate bowl, sift flour, salt and baking powder. Stir to combine.
  6. To the butter mixture, add the dry ingredients alternately with milk while mixing.
  7. Bake in prepared pans in preheated 350 degree F oven about 50-60 minutes or until done.
  8. When cakes are almost done, stir together lemon juice and icing sugar in a small bowl, to make a glaze.
  9. Remove loaves from oven and glaze immediately while still in the pans.
  10. Let cool in the pans on wire racks.
