- 1/2 cup butter or shortening
- 1 cup white granulated sugar
- 2 large eggs, lightly beaten
- 1-1/2 cups sifted all-purpose flour
- 1/2 tsp salt
- 1/2 cup milk
- grated rind of 1 lemon
Glaze:
- juice of half a lemon
- 1/4 cup icing sugar
- Grease and flour two 8-1/2 x 4-1/2 x 2-1/2" loaf pans.
- Preheat oven to 350 degrees F.
- Cream butter and sugar in a mixer 5 minutes.
- Add eggs, beating until mixed in.
- In a separate bowl, sift flour, salt and baking powder. Stir to combine.
- To the butter mixture, add the dry ingredients alternately with milk while mixing.
- Bake in prepared pans in preheated 350 degree F oven about 50-60 minutes or until done.
- When cakes are almost done, stir together lemon juice and icing sugar in a small bowl, to make a glaze.
- Remove loaves from oven and glaze immediately while still in the pans.
- Let cool in the pans on wire racks.
