Pineapple Slush--Frosty Party Drink for an Any-Season Beach Party

My sister Sandra lives in the snow belt just up the road from Lake Simcoe. She sometimes gets tired of the drone of snowmobiles, the ice fishermen's vehicles lining the road in front of her house, the endless white of snow...and more snow....

Then, she tells me, she makes a "summer theme dinner." She'll get out her checkered tablecloth, paper plates, and have an indoor "picnic" supper. Really??!! Why have I never been invited?

This recipe for Pineapple Slush is great for an adult summer picnic, pool or beach party, but you can enjoy it any time of year.

One recipe serves 20 adults, but you don't have to use it all at once--it keeps in the freezer.

For a non-alcoholic version, omit the gin, add another half-can of pineapple juice and invite the kids.
  • 1 48-oz. can pineapple juice
  • 1 12-1/2 oz. can frozen orange juice concentrate--thawed
  • 1 6-1/4 oz. can frozen lemonade--thawed
  • 1 26 oz bottle gin (optional--see above)
  • 1 cup cold, strong-brewed orange pekoe tea

Mix ingredients together well in a large, freezable container. Freeze for 48 hours. Scoop "slush" into serving glasses. To dilute, top up with club soda or lemon-lime soda if you like.
