This recipe for Pineapple Slush is great for an adult summer picnic, pool or beach party, but you can enjoy it any time of year.
One recipe serves 20 adults, but you don't have to use it all at once--it keeps in the freezer.
For a non-alcoholic version, omit the gin, add another half-can of pineapple juice and invite the kids.
- 1 48-oz. can pineapple juice
- 1 12-1/2 oz. can frozen orange juice concentrate--thawed
- 1 6-1/4 oz. can frozen lemonade--thawed
- 1 26 oz bottle gin (optional--see above)
- 1 cup cold, strong-brewed orange pekoe tea
Mix ingredients together well in a large, freezable container. Freeze for 48 hours. Scoop "slush" into serving glasses. To dilute, top up with club soda or lemon-lime soda if you like.
