Oven Fried Potatoes & Cajun Wedges

Make oven fries using large white potatoes or sweet potatoes. Large potatoes are faster to peel. If you have organic potatoes, leave on the peel for the extra vitamins. Peel-on potatoes may take longer to cook. Cut up one potato per person. Potatoes can be cut into fries or wedges. The bigger the pieces the longer they will need to bake.

A key step to making good roasted potatoes is rinsing with cool water and thoroughly drying them (to keep them from getting soggy) before adding oil and seasoning.  to season with dried thyme, basil, salt and parmesan cheese—our star ingredient!
  • 3 washed, peeled large potatoes cut into wedges OR 3 handfuls fresh sweet potato "fries"
  • 2 tbsp olive oil or olive oil/canola blend

Spices:

  • 1/4 tsp. hot paprika (a little spicy) OR
  • 1/4 tsp. chili powder, cayenne pepper or dried jalapeno peppers (spicier)
  • 1/4 tsp. garlic powder
  • fresh-ground black pepper
  • rosemary, dried thyme and/or basil, oregano
  • parmesan cheese (optional)
  • salt
  • any spice seasoning mix you like (e.g. Cajun or Italian)
Cut potatoes into wedges, rinse with cold water and dry.
Toss in a bowl with olive oil, herbs and spices, parmesan cheese (optional).
Place on a non-stick baking sheet or baking sheet greased with olive oil or cooking spray.
Bake in preheated 400 degree oven for 20-40 minutes, turning once.

Timing depends on the thickness of your potatoes. Thin fries cook faster than thick wedges.
Potatoes should be golden and crisp on the outside, tender and hot on the inside.
When done, remove from oven and sprinkle on:
  • salt OR onion salt
  • pepper
  • parmesan cheese (optional)

Cajun Oven Fries (4 Servings)

1. Scrub 4 large potatoes.
2. Cut potatoes in quarters, then into 2 wedges.
3. Place potatoes in a bowl, toss with Cajun Spice Seasoning  AND 1 Tbsp olive oil.
4. Bake on non-stick baking sheet in preheated 400 degree F oven, 20 minutes.
5. Turn fries over and bake 20-25 minutes more till golden on outside, soft in  middle.

Cajun Spice Seasoning::
  • 1 tsp. kosher salt,
  • 1/2 tsp. paprika (hot or mild)
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. white pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. onion powder
  • 1 tsp dried oregano (optional)
  • 1 tsp dried thyme (optional)
  • 1 tsp dried red chili pepper flakes
