As my children were growing up, the kids often had rushed breakfasts-in-the-van, but we never got into a drive-thru line-up in the morning. Refrigerate juice in containers ready to grab-and-go. Breakfast bars can be a real time-saver, but you can easily make your own, wrap in wax paper, and store in a cookie tin for rushed mornings.
- 1/2 cup margarine or butter
- 1/3 cup sugar or Splenda
- 1/4 cup honey
- 1 egg
- 1 tsp. vanilla
- 1-1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1/2 tsp salt
- 1 tsp. cinnamon
- 1/2 cup raisins OR other chopped, dried fruit OR chocolate chips OR carob chips
- 1/2 cup shelled, unsalted sunflower seeds
- 1/2 cup sesame seeds
- 1/2 cup dessicated coconut
Cream butter, sugar and honey, then beat in egg and vanilla. Stir in remaining ingredients. Spread batter on a greased cookie sheet if making bars. (To make cookies, drop by spoonfuls onto a greased cookie sheet and press to flatten.) Bake about 15 minutes in a preheated 350 degree oven. Cut into bars or squares after baking.
