Grease and flour an 8" square baking pan. Preheat oven to 325 degrees F. Mix together:
- 1 cup flour
- 1/2 cup butter
- 2 tbsp brown sugar
Press into the bottom of the baking pan. Dot with:
- 3-4 tbsp. fruit spread or jam OR a handful of raisins
Next, combine:
- 2 beaten eggs
- 1-1/2 cups brown sugar
- 2 tbsp flour
- 1 cup unsweetened coconut
- 1 cup chopped nuts (walnuts or pecans)
- 1/2 tsp. salt
- 1/2 tsp vanilla
Then spoon this mixture on top. Bake at 325 degrees 30-35 minutes or until topping looks fairly firm. Cool before cutting.
