- 5 eggs
- 2 cups cottage cheese
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup mushroom pieces, OR chopped and cooked bacon bits, OR minced ham, OR finely minced parsley OR chopped onion sauteed in butter.
Beat the eggs well. Stir in cottage cheese thoroughly. Add remaining ingredients (parsley will turn mixture slightly green.) Pour into a well-greased 8 inch pie plate or 1-quart casserole dish or a 6-muffin pan. Bake in preheated 325 degree oven 40-60 minutes for one large pie, or 30 minutes for individual "muffins", or until eggs are firm, a little puffed up and browned a bit on top.
