- 1 cup warm water
- 1 package yeast
- 2 tbsp. sugar
- 2-1/4 cups all-purpose flour
- 1 tsp salt
- 1 beaten egg
- 2 tbsps vegetable oil
Dissolve yeast in water. Stir in sugar, 1 cup flour, salt. Beat in mixer till smooth. Add egg and oil. Beat in 1-1/4 cups flour. Scrap dough off sides of bowl with a spatula. Cover bowl. Let rise in a warm place about 1 hour till doubled. Stir down. Fill greased muffin tins half full. Cover with a dishcloth and let rise again for 1 hour or more. Bake in preheated 400 degree oven 15-20 minutes.
