Preheat oven to 400 degrees F.
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- dash of salt
In another bowl, beat:
- 2 well-beaten eggs
- 1 cup sugar
- 1/2 cup oil
- 1/3 cup milk
To the egg mixture, stir in:
- 1-1/2 cups finely diced rhubarb
Stir the flour mixture into the egg mixture just to blend. Put in greased muffin cups. Sprinkle muffin tops with a mixture of:
- 1/3 cup brown sugar
- 1 tsp cinnamon
Bake in preheated 400 degree F oven for 20 minutes.
