Lemon Squares

Fresh Lemon Squares


Crust:
  • 2 cups flour
  • 1 cup butter
  • 1/2 cup sugar
  1. Cut butter into flour and sugar.
  2. Press into a 9 x 13 inch pan.
  3. Bake in preheated 350 degree F oven for 15 minutes.
  4. Remove from oven.
Filling
  • 4 large eggs
  • 1/4 cup lemon juice
  • 1 grated lemon rind
  • 2 cups sugar
  • 1/4 cup flour
  • 1 tsp baking powder
  1. Whisk together eggs, lemon juice, rind, sugar, flour and baking powder.
  2. Pour over partially baked filling.
  3. Return pan to preheated 350 degree F oven and bake 25 minutes more.
  4. Let cool before cutting into squares.
Lemon Meringue Squares
Make the day before serving, then refrigerate.
  • 1 cup graham crumbs
  • 1/4 cup melted butter OR margarine
  • 1/4 cup white sugar
  • 1 pkg lemon pie filling
  • 2 egg whites
  • 1 tbsp white sugar
  1. Melt the butter in the microwave in a large microwave-safe bowl or measuring cup.
  2. Mix in graham crumbs and 1/4 cup white sugar.
  3. Press half this mixture into the bottom of a greased 8x8 inch baking pan.
  4. Follow the directions on the package to make the lemon pie filling. Cool and then pour filling on top of the crust.
  5. Preheat oven to 350 degrees F.
  6. Beat the egg whites with 1 tbsp granulated white sugar until peaks form.
  7. Spread the meringue (beaten egg whites) on top of the pie filling, then sprinkle the remaining graham crumb mixture on top.
  8. Bake 10 minutes at 350 degrees.
  9. Refrigerate overnight before serving.
