Fresh Lemon Squares
Crust:
- 2 cups flour
- 1 cup butter
- 1/2 cup sugar
- Cut butter into flour and sugar.
- Press into a 9 x 13 inch pan.
- Bake in preheated 350 degree F oven for 15 minutes.
- Remove from oven.
Filling
- 4 large eggs
- 1/4 cup lemon juice
- 1 grated lemon rind
- 2 cups sugar
- 1/4 cup flour
- 1 tsp baking powder
- Whisk together eggs, lemon juice, rind, sugar, flour and baking powder.
- Pour over partially baked filling.
- Return pan to preheated 350 degree F oven and bake 25 minutes more.
- Let cool before cutting into squares.
Lemon Meringue Squares
Make the day before serving, then refrigerate.
- 1 cup graham crumbs
- 1/4 cup melted butter OR margarine
- 1/4 cup white sugar
- 1 pkg lemon pie filling
- 2 egg whites
- 1 tbsp white sugar
- Melt the butter in the microwave in a large microwave-safe bowl or measuring cup.
- Mix in graham crumbs and 1/4 cup white sugar.
- Press half this mixture into the bottom of a greased 8x8 inch baking pan.
- Follow the directions on the package to make the lemon pie filling. Cool and then pour filling on top of the crust.
- Preheat oven to 350 degrees F.
- Beat the egg whites with 1 tbsp granulated white sugar until peaks form.
- Spread the meringue (beaten egg whites) on top of the pie filling, then sprinkle the remaining graham crumb mixture on top.
- Bake 10 minutes at 350 degrees.
- Refrigerate overnight before serving.
