Old-Fashioned Baked Berry Pudding

1 cup brown sugar
2 cups boiling water
1 tbsp. butter
1/4 tsp. cinnamon or nutmeg
1 cup all-purpose flour
1/8 tsp (a pinch) salt
2 tsp. baking powder
3/4 cup brown sugar
1/2 cup milk
1 cup dried blueberries OR cranberries OR raisins OR other chopped, dried fruit
ice cream or whipped cream (optional)

Make a sauce by pouring the boiling water into a 1-quart greased casserole dish and stirring in butter, a cup of brown sugar, and spice.

Into a separate bowl, sift flour, salt and baking powder. Stir. Mix in 3/4 cup brown sugar, milk and dried fruit.

Drop this batter by tablespoonsful into the sauce.

Bake in a preheated 350 degree oven about 30 minutes or until golden brown. (The batter will rise, there will be sauce on the bottom.) Spoon into bowls and serve warm or cold with a dollop of vanilla ice cream or whipped cream if you like.
