Old-fashioned Cream Puffs

From the 1877 Sick Kid's Cookbook, contributed by Mrs. Watson Thatcher

Boil 1/2 pint water with 2/3 cup butter.
Stir in 1-1/2 cups flour while boiling.
Let mixture cool.
Add 5 well-beaten eggs.
Drop batter on greased baking sheets.
Bake 30 minutes in a "quick oven".

Slice cream puffs and fill with cream:

Beat 2 eggs with 1 cup sugar and 2/3 cups flour.
Bring 1 pint milk to a boil and stir in the egg mixture while boiling.
When partially cool flavour with lemon juice.
