Orange or Berry or Peach Pudding

5 sweet seedless oranges or peaches or cups of berries
1 cup granulated sugar
3 eggs, separated
1 tbsp corn starch
1 pint milk

Peel and cut oranges into thin slices in an ovenproof casserole dish. (Substitute peaches or berries).
Cover with sugar.
In the top half of a double boiler over water, heat 1 pint milk to boiling.
Whisk in to make a custard:
3 beaten egg yolks
1 tbsp corn starch stirred in a little cold milk
Continue stirring till thickened.
Pour custard mixture over orange slices.
Beat 3 egg whites till stiff, adding 1 tbsp sugar.
Spread meringue over top of pudding and set in oven for a few minutes to brown.
Let cool. Serve cold.
