1-1/2 cups all purpose flour
1/2 tsp baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup white sugar
- 1 cup brown sugar
- 1 1/2 cups rolled oats
- 1/2 cup flaked coconut
- 3/4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, stir together flour, baking soda, salt, white sugar, brown sugar, oats, coconut.
- Make a well in the center and pour in oil, eggs, vanilla.
- Mix well by hand.
- Roll the dough into walnut-sized balls.
- Place 2 inches apart onto greased cookie sheets.
- Flatten slightly with a fork.
- Bake 10 to 12 minutes till very light brown.
- Cool on baking sheets a few minutes.
- Remove to wire rack to cool completely.
