- 6 skinless chicken breast halves (remove skin from bone-in breasts)
- 1 crushed garlic clove
- 2 onions sliced in 1/2 inch wedges
- 1 28-oz can diced or plum tomatoes with juice
- 1 5-1/2 oz. can tomato paste
- 1-1/2 tsp dried basil leaves
- 1/2 tsp dried oregano leaves
- pinch of salt, pepper
- 2 cups grated mozzarella cheese
Preheat oven to 400 degrees F.
Rub garlic into chicken.
Place chicken breasts in a 9 x 13 inch casserole dish.
Scatter onion wedges around chicken.
Stir tomatoes with tomato paste and seasoning, pour over top.
Bake 40 minutes uncovered in centre of preheated 400 degree F oven.
Baste chicken with tomato mixture and sprinkle with cheese.
Continue baking till chicken is cooked through and cheese is golden, about 20 minutes more.
Remove chicken to heated serving plate, stir sauce, ladle over chicken.
Serve with rice or pasta and steamed broccoli.
