- 7 cups tortilla chips
- 2-1/2 cups shredded cooked chicken OR ground beef
- 2 cups grated cheddar cheese
- 1 15-oz. can black beans (rinsed)
- 1 large jalapeno pepper: slice half, chop half.
- 1/2 ripe avocado
- 1/4 cup fresh lime juice
- 1 Tbsp oil
- 1 cup chopped cilantro stems and leaves
- 1-2 Tbsp water
- salt to taste
Place tortilla chips on a lare rimmed baking sheet.
Mix together meat, 1 cup grated cheese, black beans, chopped jalapeno pepper.
Scatter on top of chips.
Sprinkle 1 cup grated cheese on top.
Bake in preheated 450 degree F. oven until heated through and cheese has melted.
Meanwhile, blend together avocade, lime juice, oil, cilantro. Add just enough water to made a smooth puree, season to taste.
Spread avocado mixture over heated nachos, sprinkle on sliced jalapeno peppers.
