Remove from package, pat dry.
Rub roast with olive oil.
Place on a rack in a shallow roasting pan.
Roast at 450 degrees F for 15 min.
Reduce heat to 350 degrees F. and roast 25 minutes per lb (1 hr 15 min. for a 3 lb. roast) or to an internal temperature of 160 degrees F.
Remove roast from oven and cover the pan loosely with foil.
Let roast rest 15 minutes before carving and serving.
Optional: sprinkle roast with rosemary and minced garlic in the last 30 minutes or so of cooking.
