Make Teriyaki Sauce:
1/4 cup soy sauce
1-1/4 cup water
1/2 tsp ground ginger
1/4 tsp garlic powder
5 Tbsp brown sugar
1-2 Tbsp honey
2 Tbsp cornstarch
Mix soy sauce, 1 cup water, ginger, garlic powder, brown sugar and honey in a saucepan.
Heat.
Mix cornstarch and 1/4 cup cold water in a cup till cornstarch is dissolved.
Add cornstarch mixture to heated sauce in pan, stirring in quickly.
Heat till thickened, take off heat and allow to cool.
Make Meatballs:
2 tbsp minced onion
1-1/4 cup Teriyaki Sauce
2 lbs lean ground beef
1 cup bread crumbs
Toothpicks for serving
Combine onion, 1/4 cup Teriyaki Sauce and raw ground beef in a large bowl.
Mix well.
Shape into small 1" meatballs.
Place on an ungreased nonstick baking seet or shallow baking pan.
Bake in preheated 325 degree F oven for 20 minutes.
Toss with remaining Teriyaki Sauce.
Place a toothpick in each meatball and serve on a platter, with Katsu Dipping Sauce if desired:
Katsu Dipping Sauce
1 cup Heinz ketchup
4 tsp dry mustard powder
1-1/2 tsp garlic powder
1-1/2 tsp ground black pepper
2 Tbsp Worcestershire sauce
1 Tbsp Frank's hot sauce (or an additional Tbsp Worcesetershire sauce if you don't like it hot)
Stir all ingredients together in a small bowl.
Cover and refrigerate 1 hour before serving.
