Cranberry Custard Pie

From a February, 2021 HGTV cooking show episode of "Miss Brown," a Thanksgiving re-run. Her pastry used self-rising flour and was made in a food processor. 
  • single crust pastry dough rolled out to 12"
  • 2 cups sugar
  • 2 Tbsp cornstarch
  • 2 Tbsp all-purpose flour
  • 1/2 tsp salt
  • 4 large eggs, beaten
  • 1/2 cup heavy (whipping)cream
  • 1 tsp pure vanilla extract
  • zest of 1 orange
  • 4 cups washed, peeled cranberries OR other berries (if using frozen, thaw and drain).
  • Orange slices tossed with 1/4 cup sugar (optional)

Line a 9-inch pie plate with pastry dough, flute edges.

Preheat oven to 350 degrees F.

In mixer or blender, beat eggs.
In separate bowl, whisk together sugar, cornstarch, flour, salt.
Add sugar mixture to eggs, beat.
Add cream and vanilla, combine.

Arrange drained fruit  and orange zest on top of unbaked pie dough.
Pour egg mixture on top, level.
Bake in preheated 350 degree oven 50 minutes or until custard is set with just a  little wobble in the centre.
To serve, garnish with sugared orange slices if desired.
